The versatile apple contributes to many delicious savoury dishes & sweet treats. Enjoy them in salads, soups and of course many a pudding recipe. Our Classic Apple Tarte Tatin is gloriously rich & wonderfully indulgent. Why not try our recipe for yourself at home – it’s a true crowd pleaser and the perfect sweet conclusion…
- 3 x Pink Lady apples, peeled & quartered
- 50g butter
- 100g caster sugar
- 1 x cinnamon stick
- 1 x star anise
- 1 x 15cm puff pastry disc
Spread the butter evenly across the bottom of a heavy based 15cm saucepan followed by the sugar. Place the cinnamon stick and star anise in the middle of the butter & sugar. Tightly pack the apple slices in the pan, positioning the cored end at the centre.
Place the pan on a high heat and let the sugar caramelise until it reaches a light golden brown colour. Take off the heat and cool slightly before placing the 15cm puff pastry disc over the apples, gently pulling it towards the edge of the pan. Remember to spike the pastry a few times to let any steam escape.
Place the pan in the oven and bake at 200 degrees C, for 25 minutes, until the pastry is crisp & golden in colour, and the apples are caramelised.
Remove from the oven and the rest for several minutes before turning out onto a plate. Serve with vanilla ice cream & enjoy…
