Describe Bel & The Dragon

Bel & the Dragon is a group of country inns & restaurants that serve amazing British food and give great service. Our style is unique and consistent; the colours, menus & furnishings, for example, are familiar to the group. We also offer an incredible selection of wines & cocktails.

Describe your role at Bel & The Dragon

A lot of work goes on behind the scene, monitoring and maintaining safety & compliance standards as well as managing the finances. However, my number one priority (as General Manager at Bel & The Dragon Godalming) is my team. If they feel inspired and have the support they need then the rest follows. Happy team, happy guests, happy days. 

What do you enjoy about your role?

Variety is the spice of life. Cliche or not, I enjoy the diversity of the role. Working with great produce & great people who care passionately about Bel & The Dragon make me happy to go to work each day.

What do you love most about Bel & The Dragon?

The personal development opportunities are unlimited for anyone that wants to learn. Bel & The Dragon develop talent from within and this feeds my appetite to succeed. My knowledge of wine has grown phenomenally in the past year. 

Best Bel & The Dragon dish?

Our Salt-Baked Saddle of Lamb is absolutely incredible. Not forgetting a side of thyme & duck fat roasted potatoes, and purple sprouting broccoli for good measure.

Top tipple? 

It has to be our Scottish Old Fashioned, an awesome twist on a classic recipe. The perfect apéritif, digestif, or cocktail for any occasion.
