Sure, the turkey will take centre stage. However, our Cauliflower with Smashed Garlic & Pecorino Cheese offers a deliciously indulgent, gloriously golden, all important side. What’s more, it has Christmas written all over it. Why not try our recipe at home…

Serves 4-6

  • 1 Large Cauliflower
  • 15g Gluten-Free Flour
  • 15g Butter
  • 300ml Milk
  • 100g Cheddar
  • 3 tbsp Freshly Grated Pecorino Cheese
  • 3 tsp Mustard
  • 1 Garlic Bulb

Preheat the oven to 180°C/350°F/gas 4. Peel the garlic and roast in the centre of the oven. Remove and cool before peeling the skin and chopping roughly with a knife.

Next, melt the butter in a pot and stir in the flour for a minute to make a paste, then gradually add the milk, whisking as you go, until lovely and smooth. Once the milk has been fully incorporated, cook gently for a further 15 minutes. Add the grated cheese, mustard and season to taste.

Place the cauliflower florets in a large pot of boiling water and simmer until tender but slightly crunchy. Quickly transfer the cauliflower to a pot of ice water to prevent further cooking then drain and dry.

To assemble, mix the cauliflower roasted garlic & cheese sauce then transfer to an oven-proof dish. Grate pecorino cheese on top and bake until golden & bubbly. Sprinkle with chopped parsley and enjoy.
